The credit for this recipe is for my dear friend Mona’s Mom, Mrs. Felber. I remember countless times after school going to her house and smelling this – her famous ApfelKooken
Preheat oven to 350F
- 3 eggs
- 1 cup white sugar
- 1 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 3/4 cup oil
- juice from 1 orange
- 1 3/4 cup flour
- 2 1/2 teaspoons baking powder
- 4 large apples, peeled and cubed
- Mix of cinnamon and sugar
Beat eggs well. Add sugar, vanilla, salt, salt, oil and juice. Beat well until frothy.
In separate bowl mix flour and baking powder.
Mix dry to wet ingredients, slowly.
Pour 1/2 of the ingredients in bundt pan. Spead apples over batter. Sprinkle in cinnamon and sugar. Pour remaining batter over apples. Sprinkle with remaining sugar and cinnamon.
Bake 35 to 45 minutes.
