There are some friends that you may not see for 20, 30 almost 40 years (!) and then you get together and the bond is there as if you had never parted. This happened this year with my friend Carolyn – We picked up where we left off and had a wonderful 2 weeks together – I tried out her super duper chocolate chip recipe, and here it is to share with you.

  • ¾ c white sugar (Carolyn originally wrote margarine!) haha
  • ¾ c packed brown sugar
  • 1 c margarine or butter, softened
  • 1 egg
  • 2 ¼ c all purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 c coarsely chopped nuts (optional, I don’t put them in)
  • 2 c semi-sweet chocolate chips

Heat oven to 375◦ C.

Mix sugars, margarine and egg in large bowl.

Stir in flour, baking soda and salt. (dough will be stiff).

Stir in chocolate chips (and nuts if you have chosen to use them)

Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.

Bake 8 to 10 minutes or until light brown. (Centres will be soft).

Carolyn’s note to me
Barb, I just let them brown slightly on the bottom, take out of the oven and let them sit a few minutes until they set more, then put them on a cooling rack. They stay chewy this way.
